Sandbakkelse
Sandbakkelse also called Norwegian Sand Tarts.
Often it can be very hard to remove these cookies from the Sandbakkelse tins. This particular recipe can be made in the food processor or Bosch, and are very easy to remove from the tins.
Cream: ½ cup butter or margarine
½ cup lard (ie.Crisco) (that stuff to make pie crusts.)
½ cup sugar
Add: 1 egg
1 tsp almond extract
2 ½ cups flour
Chill dough for an hour or so. Take a piece of dough about the size of a medium walnut and press evenly into each form, creating a thin, uniform layer. If you really want to be precise. Use 17 grams of dough for the regular size and 12 grams for the smaller size of forms. Cut off evenly around the top edge. Place forms on cookie sheet and bake at 350 F. for 15 minutes. Turn upside down on wire rack and remove form immediately. Cool.
Here is a recipe for the filling. Easy to make and it tastes great.
Lemon Filling for Sandbakkesle
Mix 2 Tbsp cornstarch
2/3 cup sugar
¼ tsp salt
Add: ½ cup of cold water and mix well.
Add: 2/3 cup boiling water.
Use the microwave to cook and stir until thick. About 1 minute. The taste of the cornstarch should be gone.
Add: egg yolk and microwave again for 30 seconds.
Fill tarts and cool. Top with whipped cream before serving.
